The Big Game is coming up in just a couple weeks, and that means parties and lots of yummy football snacks. I don’t know about you, but we really like football at my house. Unfortunately our favorite team, the Raiders, hasn’t won a championship in a while, but we will find someone else to cheer for. Plus the commercials are always awesome!
We will be watching the big game after we come home from church, so I will need some snack foods that will be easy to make. I am always looking for quick and yummy recipes to take to parties, so I decided to create one that I knew I would love. Do you like spicy appetizers? Do you like bacon? Doesn’t everyone? If so, try this recipe for bacon-wrapped jalapeno poppers. These bite-size pigskin poppers will satisfy your snack craving while you’re watching the pigskin get thrown around on tv. If you’re like my family and love anything with jalapeno or bacon, you should make a couple batches, because they won’t last very long. And make sure you have lots of beverages handy, because these have a kick to ‘em. They are best served warm, but you can make them up ahead of time and keep them in the refrigerator until it’s time to pop them in the oven.
Here’s the recipe:
Ingredients
- 10 jalapeno peppers
- 1 package thin-sliced bacon
- 1 (16oz) package of cream cheese
Instructions
- Preheat oven to 425 degrees F.
- Cut jalapenos lengthwise and remove seeds and membranes
- Fill each half with approx 2 TB cream cheese. It's easiest to just cut a slice off the block of cheese and fit it into the jalapeno.
- Cut bacon in half and wrap each half around one of the cream cheese filled jalapenos.
- Arrange in a single layer in baking dish and cook for 25 minutes or until bacon starts to crisp.
- Allow to cool for 5-10 minutes and enjoy!
